ඇඹුල් තියල්Ambul Thiyal
Southern sour tuna, dry-braised black with goraka and cracked pepper, with red rice and three village curries.
Before refrigeration, fishermen of Galle and Matara preserved the morning catch by braising it almost dry with sun-cured goraka (Garcinia cambogia) and black pepper in a clay walan. The acid and pepper keep it for days — which is why it travelled so well to the paddy fields, tucked into the banana-leaf Ambula.

පොළොස් ඇඹුලPolos Curry
Young green jackfruit slow-cooked with roasted curry powder, cinnamon bark and thick coconut milk.
Polos is the jackfruit picked young, before it sweetens. Village cooks call it ‘tree mutton’ — braised long with dark-roasted spices and Ceylon cinnamon until it pulls apart. Ours simmers the traditional way, which is why it can take a little longer on a busy evening.
කිරි හොදි
Mild turmeric coconut-milk gravy with potato, tempered red lentils and fenugreek, over rice.
Kiri hodi is the gentle heart of every Sri Lankan table — first-press coconut milk warmed with turmeric, fenugreek and green chilli, never boiled hard. It is the curry grandmothers make for children and for anyone coming home.

Bone-in village chicken curry, dark-roasted spices, pandan and a squeeze of lime, with red rice and sides.
A Sunday curry in the hill country: chicken on the bone, spices roasted in a dry clay pan until almost smoking, finished with thick coconut milk. The bones give the gravy its depth.
